Chip's Awesome Carrot Cake

Cover Mountain Carrot Cake
Preheat oven to 325.
Grease two cake pans or one 9 x 13 pan
Combine:
2 cups flour
1/2 teaspoon salt
2 teaspoons soda
2 teaspoons cinnamon
2 teaspoons allspice
Mix:
4 eggs, beaten
1 cup sugar
1 cup oil
1 teaspoon vanilla
3 cups grated carrots, about 1 lb. (you can be generous here)
Stir in dry ingredients, pour into pan(s), and bake for 45 minutes.
Frosting
1/2 cup butter, softened
8 oz. cream cheese, softened
4 cups powdered sugar
1 teaspoon vanilla
