Chip's Awesome Carrot Cake

ICE Trike dealer Chip Stern gave us his recipe for an awesome carrot cake, which was so good we thought we'd share it with you. Enjoy!

 

Cover Mountain Carrot Cake

 

Preheat oven to 325.

Grease two cake pans or one 9 x 13 pan

 

Combine:

2 cups flour

1/2 teaspoon salt

2 teaspoons soda

2 teaspoons cinnamon

2 teaspoons allspice

 

Mix:

4 eggs, beaten

1 cup sugar

1 cup oil

1 teaspoon vanilla

3 cups grated carrots, about 1 lb. (you can be generous here)

 

Stir in dry ingredients, pour into pan(s), and bake for 45 minutes.

 

Frosting

 

1/2 cup butter, softened

8 oz. cream cheese, softened

4 cups powdered sugar

1 teaspoon vanilla
